Description

Mexican Chicken Chili is the perfect dinner recipe for busy weeknights. This easy crock pot chili recipe is full of Mexican flavors, with chunks of chicken in every bite. The sauce is made with tomatoes, jalapeños, chili powder, and cumin, plus a few other ingredients you probably already have in your pantry. The flavors will develop and intensify as the chili cooks, making this a great set-it-and-forget-it dinner. Serve with your favorite toppings, like sour cream, cheese, avocado and cilantro.

Prep Time

This Mexican chicken chili takes about 10 minutes of prep time and can be ready to cook in the crock pot. You’ll want to make sure all the ingredients are prepped and ready to go before you start cooking. This includes chopping the onions and jalapeños, dicing the tomatoes, and cubing the chicken.

Cook Time

Once everything is ready, you can put all the ingredients in the crock pot and let it cook for 6-8 hours on low, or 3-4 hours on high. Cooking times may vary depending on your crock pot, so make sure to check the chili every hour or so to make sure it is cooking evenly.

Ingredients

  • 1 onion, chopped
  • 2 jalapeños, diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (4 ounce) can diced green chiles
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups chicken broth
  • 2 cups cooked, cubed chicken
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

1. Place the chopped onion, jalapeños, and garlic in a 6-quart crock pot.

2. Add the diced tomatoes, black beans, green chiles, chili powder, cumin, salt, pepper, and cayenne pepper (if using).

3. Pour the chicken broth over the top and stir to combine.

4. Add the cubed chicken and stir to combine.

5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.

6. Before serving, stir in the chopped cilantro (if using).

Equipment

  • 6-quart crock pot
  • Spatula
  • Measuring cups and spoons
  • Knife and cutting board

Notes

This chili can be served as is, or with your favorite toppings, such as sour cream, cheese, avocado, and cilantro. It can also be served with tortilla chips or over rice. For a spicier chili, increase the amount of jalapeños and cayenne pepper. To make this recipe gluten-free, use gluten-free chicken broth.

Recipe Tips

For best results, make sure to use freshly cooked chicken. You can also use leftovers, but the flavors may not be as intense. If you don’t have time to cook the chicken, you can also use pre-cooked, cubed chicken. You can also substitute the chicken broth with vegetable broth to make this a vegetarian chili.
