Lamb shoulder is a flavorful cut that is cooked in the pressure cooker with a few simple ingredients. This is a delicious main dish that is perfect for a midweek meal or special occasion.

Ingredients:

  • 2-3 lb lamb shoulder, bone-in and cut into 2-3 inch cubes
  • 2 tablespoons olive oil
  • 1 onion, roughly chopped

  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 cup chicken stock or broth

Instructions:

1. Set the Instant Pot to sauté mode and heat the olive oil. When the oil is hot, add the cubed lamb shoulder and cook for 3-4 minutes, stirring occasionally until the pieces are lightly browned.

2. Add the chopped onion and garlic and cook for another 2-3 minutes until the onion is softened.

3. Add the tomato paste, oregano, thyme, smoked paprika, cumin, salt, and pepper. Stir to combine and cook for 1 minute until the spices are fragrant.

4. Add the chicken stock and stir to combine. Place the lid on the Instant Pot and set to sealing. Cook on high pressure for 25 minutes.

5. When the cooking time is up, allow the Instant Pot to naturally release pressure for 10 minutes before manually releasing the remaining pressure.

6. Remove the lid and use a slotted spoon to transfer the lamb shoulder to a serving platter. Serve with mashed potatoes or rice and your favorite vegetables.
