Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cups vegetable broth
  • 1 cup dry lentils
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 bay leaf
  • 1 (14.5 ounce) can diced tomatoes
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

1. Press the “Sauté” button on the Instant Pot and adjust to high heat. Once the display reads “Hot”, add the olive oil, onion, garlic, carrots and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

2. Add the broth, lentils, oregano, basil, thyme, red pepper flakes, bay leaf and diced tomatoes. Stir to combine.

3. Secure the lid, making sure the steam release handle is in the “Sealing” position. Press the “Manual” button and adjust the time to 10 minutes on high pressure.

4. When the cooking time is done, allow the pressure to release naturally for 10 minutes, then move the steam release handle to the “Venting” position to release any remaining pressure. Once the valve drops, carefully remove the lid.

5. Remove and discard the bay leaf and season the soup with salt and pepper, to taste.

6. Serve the soup warm, garnished with chopped fresh parsley.

Notes

You can use any type of lentils for this recipe. Red, green, brown or black lentils all work well.

If you’d like a thicker soup, you can mash some of the cooked lentils with a potato masher before serving.
