- 2 sheets frozen puff pastry, thawed
- 1 egg, beaten

Instructions

1. Preheat the oven to 375 degrees F. Grease a 9-inch pie dish with butter.
2. In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
3. Add the garlic and cook for 1 minute. Stir in the flour and thyme and cook, stirring, for 2 minutes.
4. Slowly pour in the chicken broth, stirring constantly, until the mixture is thick and bubbly.
5. Add the peas, turkey, salt, and pepper and stir to combine. Simmer for 5 minutes.
6. Remove from the heat and stir in the parsley. Pour the filling into the prepared pie dish.
7. Unfold the puff pastry and cut into 2 pieces. Place one piece on the top of the pie and the other on the bottom. Crimp the edges to seal. Brush the top of the pastry with the beaten egg.
