Instructions

1. Start by marinating the ribs. In a medium bowl, combine the soy sauce, garlic, ginger, sesame oil, and brown sugar. Mix well until everything is combined. Place the ribs in the marinade and let them sit for at least 1 hour, or overnight if desired.

2. Next, turn on the Instant Pot and set it to the “Sauté” setting. Once it has heated up, add a tablespoon of oil and the ribs to the pot. Brown the ribs on all sides, about 5 minutes. Turn off the Instant Pot and remove the ribs.

3. Pour the marinade into the pot, then add the water. Stir to combine, then add the ribs back into the pot. Place the lid on the Instant Pot and set the valve to the “Sealing” position. Set the Instant Pot to “Manual” and cook for 25 minutes.

4. Once the timer is done, let the pressure release naturally for 10 minutes, then quick release the remaining pressure. Open the lid and remove the ribs from the pot. Turn on the “Sauté” setting and add the cornstarch to the pot. Stir until the sauce thickens, about 5 minutes.

5. Place the ribs back into the pot and coat with the sauce. Turn off the Instant Pot and garnish with the green onions and sesame seeds. Serve the ribs with steamed white rice and kimchi.
