Beef and Broccoli



This classic Chinese restaurant favorite can now be made in your Instant Pot in no time! The best part is that it’s a low carb, low sugar meal that’s packed with flavor.

Ingredients:


- 2 pounds beef (sirloin steak or chuck roast cut into cubes)
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 2 tablespoons low sodium soy sauce
- 1/4 cup water
- Salt and pepper to taste

Instructions:


1. Turn on the Instant Pot and select the “Saute” setting.
2. Add the olive oil and garlic to the pot and saute for 1 minute.
3. Add the beef and saute until it’s lightly browned, about 5 minutes.
4. Add the broccoli, ginger, soy sauce, and water to the pot and stir to combine.
5. Secure the lid on the pot, seal the vent, and cook on Manual High Pressure for 5 minutes.
6. When the timer goes off, do a quick release and open the lid.
7. Taste the beef and broccoli and adjust the seasoning with salt and pepper as desired.
8. Serve the beef and broccoli over steamed rice or cauliflower rice.
