Mushroom Risotto

Ingredients


- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup Arborio rice
- 2 cups of vegetable stock
- 2 cups of mushrooms, chopped
- 1 teaspoon of dried thyme
- 2 tablespoons of butter
- 1/2 cup of grated Parmesan cheese
- Salt and pepper, to taste

Instructions


1. Heat the olive oil in a large pot or Dutch oven over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the Arborio rice and stir to coat.
4. Add the vegetable stock and stir.
5. Bring to a simmer, reduce the heat to low, and cook for 30 minutes, stirring occasionally.
6. Add the mushrooms, thyme, butter, and Parmesan cheese and stir to combine.
7. Cook for an additional 5 minutes until the mushrooms are cooked through.
8. Season with salt and pepper, to taste.
9. Serve hot.
