Ingredients
For the mince filling:
- 1 tablespoon olive oil
- 1 onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 500 grams lean mince
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons all-purpose flour
- 2 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 2 tablespoons chopped fresh parsley
- 2 tablespoons cornstarch
- 2 tablespoons cold water
For the pastry crust:
- 2 cups all-purpose flour
- ½ teaspoon salt
- ¾ cup cold butter, cubed
- 5 to 7 tablespoons ice water
Instructions
1. Preheat the oven to 375°F (190°C).
2. Heat the olive oil in a large skillet over medium heat. Add the onion, carrot, and celery and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the mince and cook, stirring and breaking it up, until it is no longer pink, about 5 minutes. Add the garlic, tomato paste, thyme, oregano, rosemary, salt, and pepper and stir to combine. Cook until fragrant, about 1 minute. Add the flour and stir to coat. Slowly add the beef stock, stirring to combine. Add the Worcestershire sauce and brown sugar and stir to combine. Simmer until the sauce has thickened and the vegetables are tender, about 10 minutes.
3. In a small bowl, whisk together the parsley, cornstarch, and cold water until combined. Add the mixture to the skillet and stir to combine. Simmer until the sauce has thickened, about 5 minutes. Remove from the heat and set aside.
4. To make the pastry crust: In a large bowl, whisk together the flour and salt. Cut in the butter using a pastry blender or two knives until the mixture resembles coarse meal. Gradually stir in the ice water, 1 tablespoon at a time, until the dough just comes together. Do not overwork the dough. Divide the dough in half and shape into two discs. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes.
5. Roll out one disc of dough on a lightly floured surface to about ⅛ inch (3 mm) thick. Transfer the dough to a 9-inch (23 cm) pie plate. Trim the edges and crimp as desired. Pour the mince filling into the pie plate. Roll out the second disc of dough and place it on top of the filling. Trim and crimp the edges to seal. Cut several slits in the top of the pastry to allow the steam to escape.
6. Bake the pie in the preheated oven for 45 minutes, or until the pastry is golden brown and the filling is bubbling. Let cool slightly before serving.
