Instructions

Preheat the oven to 375 degrees F. Grease an 8-inch baking dish.

Melt the butter in a large skillet over medium heat. Add the onion and garlic and cook for about 5 minutes, until the vegetables are softened. Add the flour and stir for about 1 minute. Slowly add the broth and cream, stirring until smooth. Add the thyme, salt, and pepper, and bring the mixture to a simmer. Simmer for about 10 minutes, or until the sauce is thickened. Add the lobster meat, peas, and corn to the sauce and stir to combine.

Roll out the puff pastry dough on a lightly floured surface to fit the top of the baking dish. Place the pastry dough on top of the lobster mixture, tucking the edges of the dough down into the side of the dish. Brush the pastry with the beaten egg. Place the dish on a baking sheet and bake for 25-30 minutes, until the pastry is golden brown and the filling is bubbly. Let cool for 10 minutes before serving.
