Cook Time

Ingredients

This dish requires a few simple ingredients:

  • 1 pound of boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons of extra-virgin olive oil
  • 1 teaspoon of Cajun seasoning
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon of paprika
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of red pepper flakes
  • 1/4 teaspoon of cayenne pepper
  • 1/4 teaspoon of black pepper
  • 1/4 cup of white wine (optional)
  • 2 cups of chicken broth
  • 1 (14.5 ounce) can of diced tomatoes
  • 1 (8 ounce) package of penne pasta
  • 1/2 cup of heavy cream
  • 1/4 cup of freshly grated Parmesan cheese
  • 2 tablespoons of chopped fresh parsley

Instructions

The first step is to prepare the chicken. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken cubes and season with the Cajun seasoning. Cook the chicken for about 5 minutes, stirring often, until the chicken is cooked through. Remove the chicken from the skillet and set aside.

Next, add the remaining 1 tablespoon of olive oil to the skillet. Add the onion, garlic, and bell pepper and cook for about 5 minutes, stirring occasionally, until the vegetables are softened. Add the paprika, oregano, red pepper flakes, cayenne pepper, and black pepper and stir to combine. Add the white wine, if using, and allow it to simmer for 1-2 minutes.

Add the chicken broth, diced tomatoes, and penne pasta to the skillet and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes, or until the pasta is cooked. Stir occasionally to prevent the pasta from sticking to the bottom of the skillet.

Add the heavy cream and Parmesan cheese to the skillet and stir to combine. Simmer the mixture for an additional 5 minutes, or until the sauce is thickened. Stir in the cooked chicken and chopped parsley and season with additional salt and pepper, if desired.
