Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions:

1. Heat the olive oil in the Nuwave Nutri Pot Pressure Cooker. Add the onion, bell pepper, and garlic and cook for 3-4 minutes, stirring occasionally.

2. Add the diced tomatoes, rice, chicken broth, oregano, basil, salt, and pepper. Stir to combine.

3. Close and lock the lid and set the pressure cooker to the “High Pressure” setting for 15 minutes.

4. When the cooking time is complete, let the pressure release naturally for 5 minutes before turning the valve to release any remaining pressure.

5. Open the lid and fluff the rice with a fork. Serve immediately.
