The carrots and potatoes are cooked to perfection in the same pot, so there's no need to worry about making a separate side dish. And the best part? This recipe is so easy to make, even novice cooks can make it with ease.

Prep Time

This recipe only takes about 10 minutes of prep time. All you have to do is chop the carrots and potatoes, and season the beef with salt and pepper. The Ninja Instant Cooker does the rest!

Cook Time

The cook time for this Ninja Instant Cooker pot roast is about 40 minutes, depending on the size and thickness of your roast. The Ninja cooker does all the work, so you don't have to worry about checking the temperature or stirring the ingredients. Just set it and forget it!

Ingredients

  • 2-3 lb beef roast
  • 3 carrots, chopped
  • 3 potatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

1. Begin by seasoning the beef roast with salt and pepper. Heat the olive oil in the Ninja Instant Cooker on the sauté setting. Once the oil is hot, add the beef roast and brown on all sides. This should take about 5 minutes.

2. Once the beef is browned, add the chopped onions, carrots, potatoes, garlic and beef broth. Stir to combine.

3. Place the lid on the Instant Cooker and press the slow cooker button. Set the timer for 40 minutes and let it cook.

4. Once the timer goes off, remove the lid and check the temperature of the beef. It should be at least 145 degrees F. If the temperature is not high enough, continue cooking for an additional 10 minutes.

5. Once the beef is cooked, remove it from the Instant Cooker and let it rest for 10 minutes before slicing.

6. Serve the pot roast with the carrots and potatoes, and any other sides you'd like.

Recipe Tips

For a heartier pot roast, add some cubed potatoes and carrots to the pot before cooking. This will add extra flavor and make the dish even more filling.

If you're looking for a richer flavor, try adding a few tablespoons of tomato paste to the pot before cooking. This will give the dish a deep, smoky flavor.

To make the pot roast even more flavorful, try adding some herbs and spices. Thyme, rosemary, and garlic powder are all great additions.
