Ingredients

  • 1 left over ham bone
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 4 cups chicken broth
  • 2 cups dried white beans, rinsed and picked over
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon salt, or to taste

Instructions

1. Add the diced onion, celery, garlic, thyme, oregano, paprika, pepper, and bay leaves to the Instant Pot and sauté for 3-4 minutes, stirring occasionally.

2. Add the ham bone, chicken broth, and beans to the Instant Pot. Lock the lid in place and turn the steam release valve to the sealing position.

3. Select manual/high pressure and set the timer for 20 minutes. When the timer beeps, turn the steam release valve to the venting position to do a quick pressure release.

4. Carefully remove the lid and remove the ham bone. Discard any fat or gristle and shred the meat from the bone. Add the meat back to the soup.

5. Stir in the apple cider vinegar and salt, to taste. Serve the soup warm with crusty bread or your favorite sides. Enjoy!
