- 1 pound chicken, cut into cubes
- 1 pound smoked sausage, cut into slices
- 1 pound raw shrimp, peeled and deveined
- 1 cup onion, diced
- 1 cup celery, diced
- 1 cup bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 bay leaves
- 1/2 cup all-purpose flour
- 3 cups chicken broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons hot sauce
- 2 tablespoons butter
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
1. In a large skillet over medium-high heat, melt butter. Add chicken, sausage and shrimp and cook until lightly browned, about 5 minutes. Transfer to a 6-quart slow cooker.
2. Add onion, celery, bell pepper and garlic to the slow cooker. Add oregano, cayenne pepper, paprika, thyme and bay leaves. Stir to combine.
3. In a medium bowl, whisk together flour, chicken broth and Worcestershire sauce. Pour over the mixture in the slow cooker. Add hot sauce and stir to combine.
4. Cover and cook on low heat for 6 hours, stirring occasionally.
5. After 6 hours, stir in parsley and season with salt and pepper to taste. Serve with rice or crusty French bread.

Notes
For a gluten-free gumbo, use a gluten-free flour in place of the all-purpose flour.
