It is a comforting dish that is easy to make and can be enjoyed by the entire family. This pot pie is sure to be a hit in your household!

Prep Time

This recipe takes approximately 25 minutes to prepare. You will need to preheat your oven to 375 degrees Fahrenheit. It is recommended to have all of the ingredients pre-measured and chopped before you begin the cooking process.

Cook Time

The total cooking time for this recipe is about 40 minutes. The pot pie will need to bake in the preheated oven for 30 minutes. Once the top of the crust is golden brown, it is ready to be served.

Ingredients

  • 2 tablespoons of olive oil
  • 1 small onion, chopped
  • 1 cup of frozen mixed vegetables
  • 1/2 cup of sliced mushrooms
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of ground sage
  • 1/4 teaspoon of ground thyme
  • 2 cups of chicken broth
  • 1/2 cup of heavy cream
  • 2 cups of cooked, cubed chicken
  • 1/4 cup of grated parmesan cheese
  • 1/2 package of frozen puff pastry, thawed
  • 1 egg

Instructions

1. Preheat your oven to 375 degrees Fahrenheit.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for about 4 minutes, or until the onions are soft and translucent. Add the frozen mixed vegetables, mushrooms, garlic, salt, black pepper, ground sage, and ground thyme. Cook for an additional 3 minutes, stirring frequently.

3. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce has thickened slightly. Add the cooked, cubed chicken and parmesan cheese. Stir until the ingredients are combined.

4. Grease a 9-inch pie plate with butter or cooking spray. Unfold the puff pastry and place it in the pie plate, pressing it into the edges. Pour the filling into the pastry-lined pie plate. Cut several slits in the top of the pastry to allow steam to escape.

5. Beat the egg in a small bowl and brush it over the top of the puff pastry. Bake in the preheated oven for 30 minutes, or until the crust is golden brown. Allow the pot pie to cool for 10 minutes before serving.

Equipment

  • Large skillet
  • 9-inch pie plate
  • Brush
  • Small bowl

Notes

Be sure to thaw the puff pastry before using it. If the pastry is still frozen, it will not be able to be formed into a crust. When brushing the egg over the pastry, make sure the egg is evenly distributed to ensure a golden-brown crust.

Recipe Tips

If you do not have frozen puff pastry, you can use a pre-made pie crust. Be sure to pre-bake the crust before adding the filling. This will ensure that the crust does not become soggy.

If you would like to make this dish vegetarian, you can omit the chicken and replace it with more vegetables. You can also replace the chicken broth with vegetable broth for a vegan-friendly option.
