Prep Time

Ingredients

-1 cup green or brown lentils

-1 onion, diced

-3 cloves garlic, minced

-1 carrot, diced

-1 celery stalk, diced

-2 tablespoons tomato paste

-1 teaspoon dried oregano

-1 teaspoon smoked paprika

-1/2 teaspoon cumin

-1/2 teaspoon chili powder

-1 bay leaf

-1 tablespoon olive oil

-4 cups vegetable broth

-Salt and pepper, to taste

-Fresh parsley, for garnish

Instructions

1. Set the Instant Pot to the sauté setting. Add the olive oil and onion and cook for 3 minutes until the onion is softened. Add the garlic and cook for 1 minute.

2. Add the carrot, celery, tomato paste, oregano, smoked paprika, cumin, chili powder, bay leaf and a pinch of salt and pepper. Stir to combine and cook for 2 minutes.

3. Add the lentils and vegetable broth and stir to combine.

4. Place the lid on the Instant Pot and set the pressure release valve to the sealed position.

5. Cook on high pressure for 25 minutes.

6. When the cooking time is finished, carefully release the pressure.

7. Remove the lid and stir the stew.

8. Taste and adjust the seasoning, if needed.

9. Serve the stew with a sprinkling of freshly chopped parsley, if desired.

This recipe requires an Instant Pot or pressure cooker. It also requires a sharp knife, cutting board, measuring cups and spoons, and a wooden spoon.

Notes

This recipe is vegan and gluten-free. If you’d like to add some protein, you can add some cooked and crumbled bacon or cooked and shredded chicken. You can also add some cooked and crumbled Italian sausage.
